Winter Warmer – a yummy soup recipe:)

Thursday, January 21st, 2010

Hi everyone:)

I love making soup, so easy to make and a great way of adding a load of vegetables to my diet.  This can be frozen too if you don’t want to eat it all at once:) We came up with a particularly tasty recipe the other night so I thought I’d share it with you guys:) Annoyingly, I forgot to take a photo, but it’s red:)

Serves 6-8

What you need:

2 x medium onions

1 x clove of garlic

2 x medium chillis

3/4 x carrots

4/5 x sticks of celery

1 x large potato

2 x tins of chopped tomatoes

1 litre of chicken/vegetable stock

Fresh/dried basil, oregano, mixed herbs, salt and pepper to taste

How to make:

- Finely chop up garlic, onions and chillis; peel carrots/potato and chop up into small pieces with the celery

- Gently fry garlic onions and chillis in a big pan with a generous slug of olive oil until soft, season well

- Add carrots, celery, potatoes and tomatoes; season well and keep stirring to warm through

- Add dried/fresh herbs

- Add stock and bring to the boil, leave to simmer for 30 minutes (until all vegetables are soft)

- Leave to cool then blend until all the big lumps are removed

Serving suggestion:

Reheat and top with quickly fried torn proscuittio and creme fraiche, serve with warm ciabatta, YUM!:)

Hope you like it!:)
